<p>So I searched the cupboards and fridge trying to find something for him to bring.</p>
<p>For a throw together, it turned out amazing, and some people at his work wanted the recipe!  When I originally made it, it was with Orzo as I didn’t have Quinoa on hand.  So when I made it a second time with quinoa, we liked it better, and quinoa has much more protein.</p>
<p>This is a great make-ahead dish to have in the fridge to have for lunch and take to work/school etc.</p>

<h2>Greek Quinoa Salad</h2>

<p>1.5 cups raw quinoa, rinsed well and drained<br />
185 grams lower fat feta<br />
1/2 cup sun-dried tomato (not packed in oil), reconstituted in a small bowl of boiling water, then chopped<br />
1/2 whole english cucumber, seeded &#038; chopped<br />
1 medium green pepper, chopped<br />
1 medium red pepper, chopped<br />
1 tsp dried basil<br />
1 tsp dried oregano<br />
2 cloves garlic, chopped fine<br />
1 Tbsp olive oil<br />
4-5 Tbsp balsamic vinegar<br />
Sea salt &#038; pepper to taste</p></blockquote>
<p><strong>Note:</strong> You could also add olives (I didn’t because I wanted the sodium on the lower side), or other types of peppers.  I wouldn’t add tomato as it will get mushy and won’t last in the fridge.  I would also not recommend fresh herbs, as they will wilt after a couple hours.</p>
<p>In a medium pot add quinoa and water (its a 2:1 ratio, so 3 cups of water should be sufficient.)  Bring to a boil, then turn it down to a simmer for 15-20 minutes until done.  Meanwhile chop up the veggies and add them all to a bowl.  Add in all the other ingredients.  Lastly, add the hot quinoa and toss. Tastes the best when it has a bit of time to settle in the fridge.</p>
<p>Store in a sealed container in the fridge.</p>

We’re both not that big on having full on dessert, but maybe we’ll share a bit of chocolate after  </p>
<p>This recipe isn’t really a ‘recipe’ per say, its more of a combination of ingredients that’s REALLY good.  There is a local chain of restaurants in Vancouver called Cactus Club, and this Bandara Salad is on their menu.  I tried to replicate it at home, and it came out pretty good!  At the restaurant they add those Chinese type crunchy noodles on top, but I always ask for it without anyway.  The dressing I still haven’t gotten quite right, but I found a good substitute that isn’t homemade, that will do for the time being and I need a fix!</p>

<strong>Serves 1</strong><br />

1 tsp cajun seasoning (I use Hy’s Cajun Seasoning, but use whatever one available to you)<br />
3-4 cups mixed greens<br />
1/4 cup corn (I used frozen)<br />
1/4 cup chopped cucumber<br />
1/4 red or orange pepper, chopped<br />
4 pitted dates, sliced<br />
2 Tbsp (30 grams) light feta cheese, crumbled<br />
2 Tbsp Renne’s Gourmet Tangerine Lime Dressing (if this brand isn’t available, try any sort of honey/lime type dressing)</p></blockquote>
<p>First, cook chicken.  Add cajun seasoning and cook until no longer pink.  I cook on my Hamilton Beach indoor grill for 7 minutes.  Meanwhile, add corn in a bowl and cover with water. Place paper towel over, and microwave for about 3 minutes. Drain corn and let cool.  Chop all your veggies and dates for salad.  Assemble salad with all the ingredients, and top with sliced chicken breast.</p>

Calories: 408<br />
Fat: 13.5 g<br />
Carbs: 42 g<br />
Fiber: 6.5 g<br />
Sugar: 29 g<br />
Sodium: 800 mg<br />
Protein: 31.5 g</p>

This recipe is gluten-free, with added protein and a great snack. Even though its technically “coffee” cake because of the crumble, this recipe is healthy enough to have as a snack versus dessert!  I was inspired by <a href="http://www.fitsugar.com/Healthy-Blueberry-Lemon-Coffee-Cake-Recipe-22275172 ">this recipe</a> I came across, but made my own modifications.  I hope you enjoy it as much as we do!</p>
<h2>Blueberry Lemon Coffee Cake</h2>
<p>Makes 16 squares</p>
<p>Ingredients &#8211; </p>
<p><strong>For the cake</strong></p>
<p>1 1/2 cups oat flour (or flour of choice)<br />
1/3 cup almond meal (just ground up raw almonds) *could also sub for additional flour<br />
2 x 30 gram scoops (or 1/2 cup) of whey protein in plain or vanilla (I used <a href="http://www.wheygourmet.com/products/wheygourmetnaturelle.php ">Whey Gourmet Naturelle</a><br />
Vanilla) *could also sub for additional flour<br />
1/3 cup stevia for baking (or 10-12 packets, or sweetener of choice) (I used <a href="https://nunaturals.com/ ">NuNaturals Baking</a> Formula)<br />
3 tsp baking powder<br />
1/2 tsp baking soda<br />
1/2 tsp salt<br />
1 1/4 cups blueberries (I used frozen, could use fresh)<br />
2 egg whites (or replacer for 1 egg)<br />
3/4 cup unsweetened almond milk (or milk of choice)<br />
1 Tbsp lemon juice<br />
2 tsp lemon zest (about the zest from 1 lemon)<br />
3 Tbsp unsweetened applesauce</p>
<p><strong>For the topping</strong></p>
<p>1/4 cup sucanat (or coconut palm sugar or another raw dark sugar)<br />
3 Tbsp sliced almonds (or regular almonds), chopped<br />
1 1/2 Tbsps melted butter (or vegan margarine, or coconut oil)<br />
1/2 tsp cinnamon<br />
2 tsp quick oats</p>
<p><strong>Directions</strong></p>
<p>Preheat your oven to 350 degrees F. Spray an 8×8 dish with cooking spray or you could also use muffin tins (cooking time will be slightly less). Mix all the dry ingredients in one bowl (oat flour, almond meal, protein, stevia, baking soda, baking powder, salt). Add the blueberries to the dry ingredients and toss. In a separate bowl, add all the wet ingredients (egg whites, lemon juice, lemon zest, applesauce) and whisk or stir well. Add the wet ingredients to the dry and fold together until just combined. Pour the batter into your pan or muffin tin. In a small bowl, combine all the topping ingredients, and sprinkle over the cake.</p>
<p>Bake the cake at 350 degrees for around 25-30 minutes. Cake will be done when you press down in the middle and it feels spongy to the touch. A toothpick will also come clean. Careful not to over-bake or it will be dry. If you put it in muffin tins, I would check them at 15-20 minutes.</p>
<p>Allow to cool and cut into 16 squares.</p>
<p>Nutrition (per 1 square, makes 16 squares or 16 muffins)</p>
<p>Calories: 93   Fat: 3 g   Carbs:  13 g   Fiber: 2.5 g   Sugars: 3.5 g   Sodium: 236 mg   Protein: 5 g</p>

<p>The texture is amazing and the sweetness is just right.  Since it seems to be pumpkin themed everything lately, I decided I wanted to do some sort of cheesecake.  I was able to make this dairy-free by using a tofu-based cream cheese substitute.  </p>
<p>It really does taste like the real thing, you can’t tell its a substitute.  But of course, if you don’t need dairy-free, you can use regular cream cheese.  I adapted this recipe from Martha Stewart.</p>

<p><strong>Ingredients</strong></p>
<p><strong>Crust</strong></p>
<p>20 gluten free graham crackers, ground into crumbs (I used S’morables) or your favorite gluten free cookie (1 1/2 cups approx of crumbs*)<br />
2 packets stevia (or 2 Tbsp sweetener of choice)<br />
4 Tbsp dairy free margarine (I used Earth Balance) or butter, melted (could also use coconut oil, but might give a bit of a coconut flavor)</p>
<p><strong>Filling</strong></p>
<p>2 x 8 oz tubs Toffuti Better Than Cream Cheese for non-dairy, otherwise, 2 x 8 oz blocks of light cream cheese<br />
16-17 packets of stevia (or 3/4 cup sweetener of choice) adjust to taste<br />
1 cup canned pumpkin or pumpkin puree<br />
3 egg whites (or 1/4 cup + 2 Tbsp carton kind)<br />
3 Tbsp cornstarch<br />
1 tsp pumpkin pie spice<br />
1/4 tsp salt<br />
1/3 cup semi-sweet chocolate chips (check label for dairy-free). In Canada, I use PC Decadent Semi-Sweet Chocolate Chips</p>
<p>* Nutrition is based on 20 gluten free graham crackers.  Depending on what you use as sizes vary, aim to use 1 1/2 cups of crumbs.</p>
<p><strong>Directions</strong></p>

Spray or grease an 8×8 inch baking pan.  Add melted margarine or butter to cracker/cookie crumbs.  Mix together and press into pan evenly.  Bake for 10 minutes until just golden around edges. Set aside to cool.</p>
<p>Place cream cheese substitute in blender or food processor and blend until smooth.  Add in stevia, pumpkin, egg whites, pumpkin pie spice, cornstarch and salt. Blend again until smooth.</p>
<p>Put chocolate in a microwave safe bowl, microwaving in 30-second increments until melted.  Once melted, add 1/3 cup of the pumpkin filling mixture to the melted chocolate and stir until blended.</p>
<p>Pour remaining pumpkin filling mixture on top of the crust.  Drop dollops of the chocolate mixture onto the pumpkin mixture and swirl with a knife to make a marble pattern.</p>
<p>Bake at 350 degrees F for 28-30 min until firm.  Once cooled, cover, and chill in the fridge at least 2 hours (and up to 2 days). Cut into 16 squares or 36 bites.  Leftovers can be frozen to store.</p>

<p>Feeling unhealthy can be a vicious cycle.  You Eat Bad &#8211; Less Energy &#8211; Get Lazy &#8211; No Exercise.  I&#8217;ve been in this cycle myself before, and sometimes it&#8217;s very difficult to get out of it.<br />
Alternatively, do you find yourself going to the gym, but not really motivated when you&#8217;re there?  Or perhaps you&#8217;re not excited to go at all, and actually dread it?</p>
<p>Here are some things that get me excited about working out:</p>

Music always helps me get motivated.  I get excited to go to the gym and hear all the new songs I&#8217;ve downloaded.</p>

Old stagnant workouts get boring really fast.  Starting up a new program can spark new interest and new motivation.</p>

Many people find being accountable to someone makes it easier to stay motivated.  I haven&#8217;t been lucky enough to have a workout partner for the last 5 years, but when I do have an opportunity, I take it.</p>
<p><strong>5)</strong> <em>New Workout DVDâ€™s</em><br />
If you prefer to workout at home, it can be easy to pass on workouts.  Chalene<br />
Johnson and P90X are both great workout programs.  I also like Tony Horton 10-Minute Trainer as its quick!  There are tons out there, so just look.</p>
<p><strong>6)</strong> <em>Magazines</em><br />
I like getting new magazines to read at the gym only!  I actually subscribe to quite a few: Oxygen, Clean Eating, Cooking Light, Eating Well &#038; US Weekly.  If I have a bunch at home that I&#8217;m wanting to read, I just allow myself to only read them at the gym.  It gets me excited to go, and makes doing cardio so much easier.</p>

<p>Since its summer, why not make it a frozen lemonade instead and have it even more refreshing…great idea I thought!  This recipe makes 1 large lemonade, but if you need more, just double or triple the recipe.</p>
<p><strong>Sugar Free Frozen Lemonade</strong><br />

2 packets stevia (I used NuNaturals, you may need more or less depending on brand. If you use drops, start with 10-15 drops, concentrated extract start with 1/8 of a tsp)</p>
<p>Directions:</p>
<p>Using a blender (I used a Magic Bullet), place all ingredients &#038; blend. Adjust sweetness if desired. Enjoy!</p>

				<content:encoded><![CDATA[<p>By Kristine Fretwell. I love a good turkey burger.  One of my other favorites is the Greek Turkey Burger recipe.  This time, I wanted a more traditional style burger, but something that had a lot of flavor<span id="more-84893"></span>, and this certainly fits the bill.  Since the onions are caramelized, its a mild enough flavor for kids, while still pleasing adult tastes.  If you’re a big mushroom fan, you could also add some in with the onions when they’re cooking and I bet that would be delicious too!</p>
<p>We ate our burgers with the Rainbow Quinoa Salad on the side.</p>
<blockquote><h2>Caramelized Onion Turkey Burgers</h2>
<p><em>Makes 5 burgers</em></p>

<p>For the sauteed onions</p>
<p>1 1/2 medium onions, sliced into very thin rounds<br />
2 tsp olive oil<br />
1 Tbsp worcestershire sauce<br />
1 Tbsp balsamic vinegar<br />
1 tsp garlic powder<br />
Pepper, to taste<br />
1/4 cup water (may need a bit more)</p>
<p>For the burgers</p>
<p>1 package extra lean ground turkey ( 1 pound or 454 grams)<br />
1 tsp garlic powder<br />
1/2 tsp dried oregano<br />
1 tsp yellow mustard</p>
<p>In a skillet over medium heat, add olive oil.  Add thinly sliced onions, garlic powder &#038; pepper and saute until almost translucent.  Add worcestershire and balsamic.  Once that’s absorbed, add water and saute until they’re a darker brown color and fully cooked.  The whole process will take about 10 minutes.  Remove from heat.</p>
<p>In the meantime, add raw turkey meat to a bowl, and add in garlic powder, oregano &#038; mustard.  Add in the warm sauteed onions and mix.  Form into patties and cook on a hot indoor or outdoor grill until cooked &#038; no longer pink (7-8 minutes on an indoor grill, 8-9 minutes on an outdoor grill, flipping once).</p>
<p>Dress your burger with your favorite items (whole grain or gluten free bun, lettuce, tomato, mustard, ketchup, cheese etc).  My husband enjoyed his with a bit of aged white cheddar (as pictured).</p>

<p>This recipe could also be made dairy-free if you replace the butter with Earth Balance (non-dairy margarine) and cream cheese with Tofutti (soy based cream cheese that tastes identical to cream cheese)</p>

<strong>Dough</strong></p>
<p>2/3 cup unsweetened almond milk (I used Silk True Almond) *or use milk of choice<br />
1 Tbsp yeast<br />
2 Tbsp butter<br />
1 Tbsp raw sugar (like palm sugar, cane sugar or sucanat)<br />
3 packets stevia<br />
1 egg<br />
1/4 cup unsweetened applesauce<br />
1 tsp vanilla<br />
3/4 cup + 1 Tbsp cornstarch (could also use arrowroot powder)<br />
3/4 cup oat flour<br />
1/4 tsp baking soda<br />
2 1/2 tsps xanthan gum *see Note<br />
2 tsp baking powder<br />
pinch salt</p>
<p><strong>Filling</strong></p>
<p>1/3 cup sucanat<br />
1 1/2 Tbsp cinnamon<br />
2 Tbsp butter, softened</p>

<p>1 Tbsp butter, softened<br />
2 Tbsp low fat cream cheese, softened<br />
1 cup icing sugar<br />
1/2 tsp vanilla</p>
<p><em><strong>* Note:</strong> Xanthan gum can be found at health food stores or the natural section of your grocery store.  It helps bind gluten-free dough, so I wouldnâ€™t omit it.  Iâ€™m not sure how the dough would turn out if you didnâ€™t use it.</em></p>

<p>1. Dissolve the yeast in a large mixing bowl with warmed milk. Let bubble for a few minutes</p>

<p>3. Add together the dry ingredients in a separate bowl (corn starch, oat flour, baking soda, xanthan gum, baking powder, salt. Mix to combine.</p>
<p>4. Slowly add the flour mixture to the wet, stirring until well combined.  The dough will appear sticky and wet, but if its too sticky to come together, add additional cornstarch (2 tsp to 1 Tbsp)</p>
<p>5. Remove dough from bowl and place in a greased bowl (sprayed with cooking spray or lightly brushed with butter). Cover with a kitchen towel and set aside to rise for 45-50 minutes. It will still look sticky when done, this is normal.</p>
<p>6. Preheat oven to 400 degrees F</p>
<p>7. Roll dough to 1/4 inch thick square shape between 2 pieces of well floured parchment paper (cornstarch works best).</p>
<p>8. Remove the top sheet of parchment and add filling. Spread softened butter on dough.  Combine sucanat and cinnamon and sprinkle over buttered dough</p>
<p>9. Using the bottom of the parchment paper as a guide, roll the dough into a log.</p>
<p>10. Carefully cut the dough into 8 equal pieces using a serrated knife. Place rolls into a pie pan or other oven-proof dish sprayed with cooking spray. Leave a little bit of space between the rolls so they have room to expand.</p>
<p>11. Bake in the oven for 18-22 minutes until the tops are golden brown and the sugar has melted.</p>
<p>12. While the rolls are baking, whip together frosting ingredients until soft and creamy. I found an electric beater worked best. You will not need to add extra liquid that whatâ€™s listed, it just takes a bit for it to come together.</p>
<p>13. Frost the warm cinnamon rolls (best out of the oven), and smile at the fact how delicious and healthier they are than regular cinnamon rolls!</p>

With her keen organization skills, she hopes to inspire other new moms to get back into shape amongst a hectic schedule, and help people of all ages keep motivated and lead them on a path to a healthier life mentally and physically.</p>

<p>It makes six servings and the hot sauce gives it a really nice zing.</p>

<h2>Slow Cooker White Chicken Chili</h2>
<p>This is an easy meal to put together, you just toss it all in the slow cooker!  Its a nice switch up to traditional tomato based chili.</p>
<p>Makes 6 servings</p>
<p><strong>Ingredients:</strong><br />

1 onion, chopped<br />
2 c. sliced mushrooms<br />
2 c. low sodium chicken broth<br />
1 can white kidney beans (15 oz) rinsed and drained<br />
2 tsp chili powder<br />
1 tsp cumin<br />
1 tsp garlic powder<br />
1/2 tsp oregano<br />
Pepper to taste</p>
<p><strong>Garnish:</strong><br />
Chopped fresh cilantro<br />
Chopped green onion<br />
Hot sauce (I used Franks)</p>
<p><strong>Directions:</strong><br />
Chop up the raw chicken into larger bite sized pieces, and place in the slow cooker. Add in everything else (except garnish items).  Stir it around to blend.  Cover it and cook on LOW for 7 hours.  You could also try cooking it on HIGH for 3-4 hours.  Once finished, spoon into bowls and top with cilantro &#038; green onion (about 2 Tbsp on each).  Then also put in a few shakes of hot sauce into each bowl.  I wouldnâ€™t omit the hot sauce, it gave it a really nice zing.</p>

				<content:encoded><![CDATA[<p>By Kristine Fretwell. Halloween is a time for fun, and for most, a time for candy.  It can be hard to resist temptation when the treats are staring you in the face at work and at home.<span id="more-68000"></span>  </p>
<p>Most of the fun sized candy bars seem small and harmless, but who can just stop at one? The calories can add up really fast.  Before you know it, you&#8217;ve consumed more than a full sized chocolate bar.</p>
<p>If you don&#8217;t want all that extra junk food throwing a wrench in your health and fitness plan, follow these tips.<a href="http://www.abbotsfordtoday.ca/wp-content/uploads/2011/10/halloween-candy.jpg"><img src="http://www.abbotsfordtoday.ca/wp-content/uploads/2011/10/halloween-candy-150x150.jpg" alt="" title="halloween candy" width="150" height="150" class="alignleft size-thumbnail wp-image-68002" /></a></p>
<p><strong>1) Get rid of the excess candy</strong><br />
Whether it means giving it away, throwing it away or even donating it, get it out of the house.  I hear that some dentists will take some of your child&#8217;s candy for prizes.  You could also take some to your local food bank or shelter.</p>
<p><strong>2) Don&#8217;t let a couple bad days ruin your week</strong><br />
Don&#8217;t let a couple days of bad eating make you throw in the towel for the whole week. Get right back on your eating plan the next day.  If you&#8217;ve over-eaten and aren&#8217;t as hungry the next day, make sure to still eat regularly.  If your appetite isn&#8217;t there, stick with proteins and veggies and go easy on the carbs.</p>
<p><strong>3) Keep variety high</strong><br />
Boredom in your everyday diet can cause you to reach for the treats.  A healthy diet doesn&#8217;t mean plain chicken and broccoli, so find new recipes and stay excited about healthy food. <p><strong>4) Sub with water &#038; gum</strong><br />
When cravings strike, drink water and reach for a stick of gum.  Water does a great job of filling you up, so it will subside the cravings.  Gum is great as it will give you the sweet kick, but without the calories.</p>
<p><strong>5) Don&#8217;t forget to eat</strong><br />
Skipping meals is the worst way to save calories.  You&#8217;ll end up more hungry and reaching for junk food.  Having a balance of protein, carbs and healthy fats at each meal will keep you on plan and keep cravings at bay.  I recommend eating 5-6 small meals a day, that way, you&#8217;re never starving as you have a constant food supply every few hours.</p>
